Cheese Day (Idiazabal)

Since 1998 this fair has been taking place in the town of Idiazabal where the young cheeses of the season are presented to the public. Although several events will be organized in the days leading up to the fair, the official day devoted to such a prized delicacy is on the first Sunday in May.

Early in the morning the shepherds stalls will be open to the public. All those in attendance can sample the cheese and vote for their favourite. Last year close to 500 kilos were distributed. Additionally, the fair will feature other produce such as honey, chocolate, txakoli, cider, wine, bread and much more.

Two local shepherds show how cheese is made, each in their own way: one of them makes the cheese using traditional methods, while the other uses more modern techniques. Shortly after, visitors can see in situ the process of smoking cheese as well as the preparation of the curd. During the morning visitors can see a shepherd leading his sheep.
