Txangurro - Spider Crab

Txangurro - Spider Crab

Ingredients: 1 Spider crab.
1 spoonful of chopped onion
1 spoonful of diced tomato.
1/2 spoonful of chopped leek.
Olive Oil
Brandy
Bread crumbs
Butter

Preparation:
Boil the spider crab in salted water for 15 minutes from the time it starts to boil.

Fry the chopped onion and leek in olive oil. Add the peeled diced tomato, and let it cook for 15 minutes until the dice soften and turn into a sauce. Cut open the spider crab and pour the juice in the saucepan with the sauce. Add a spurt of brandy and mix well. Remove the meat from the crab legs and the body in large pieces (use a mallet to break the legs open). Mix in with the sauce and bring to simmer. Pour into the empty shell and cover with a bit of butter and bread crumbs. Grill in the oven.
