Visiting the bustling and colourful Ordizia market, which has been held every Wednesday since 1512, allows locals, the curious and food lovers to discover the best seasonal products from the local farmhouses. The market can be explored in different ways, in a wider context, where as well as visiting the stalls and talking to the local producers, you can explore other places and spaces historically related to it, and finally taste a typical pintxo (tapa) in one of the local establishments. You can also visit the market in the company of a professional chef, buy seasonal products and, at the end of the visit, all the members of the group can prepare delicious snacks to be tasted accompanied by organic txakoli from the region.
A tour of Segura, a medieval town that forms a remarkable Historic-Artistic Site, allows you to admire numerous ancestral homes and palaces that reflect the grandeur of its past. In Segura you can also discover the secrets of the production of the famous Idiazabal D.O. cheese at the Ondarre cheese factory, with more than 200 years of tradition producing Latxa sheep's cheese (a native Basque breed) in a completely artisan way, followed by a tasting of 2 types of cheese, accompanied by homemade apple jam, water and cider.
The experience culminates with a pairing tasting guided by the sommelier Iban Mate from Beasain, where you will taste txakoli D.O. Getaria and cheeses D.O. Idiazabal, two exclusive products from the Basque Country, produced only 5 km away and present in the popular Basque gastronomy.
